UsesTara Gum is a gum that is a galactomannan obtained from the seed of the tara plant, cesalpiniea spinoza .it has a mannose:galactose ratio of 3:1, placing it between guar gum and locust bean gum. it is partly cold water soluble and increases in viscosity upon heating and cooling. it reacts synergistically with certain carrageenans and xanthan gum to provide increased viscosity and gelation. it functions as a thickener, stabilizer, and gelling agent. uses include ice cream, dairy products, baked goods, sauces at use levels ranging from 0.1 to 0.8%.
