Hibiscetin Usage And Synthesis
Chemical PropertiesDark red powder, paste or liquid with a slight peculiar smell. This water-soluble pigment is bright red when it is acidic, and red to purple when it is neutral to alkaline. Poor heat and light resistance.
UsesHibiscetin can be used as edible red (to purple) coloring. It is suitable for foods whose pH value is below 4 and does not require high temperature heating, such as syrup, cold spots, powder drinks, sherbet, sorbet, jelly, etc. The dosage is 0.1% to 0.5%.
